Here I have used amaranth leaves (Dantina Soppu / harive soppu) for making sambar. Amaranth leaves comes in two colors - red and green. You can use any or mix both. Of all the Green leafy sambars, amaranth leaves sambar are my kids favorite as they love to eat the stem of it.

Instructions to make Amaranth leaf curry (Kempu harve soppu huli):
  1. Pressure cook 0.5 cup tur dal
  2. In a pan add amaranth leaves + 4-5 cups of water and boil until the leaves are cooked. Stir in between and add salt
  3. In a mixer take coconut + rasam powder + turmeric + hind and grind well
  4. Add the paste to the pan + jaggery + tamarind paste and let it boil in medium flame. Now add cooked tur dal to it.
  5. For tempering take a tsp of ghee + mustard, cumin, Urrad seeds, red chilli and curry leaves. Once it splutters add it to the prepared curry. Serve it hot

You can use any or mix both. Of all the Green leafy sambars, amaranth leaves sambar are my kids favorite as they love to eat the stem of it.
