Instructions to make Bottle Gourd kofta curry:
- In a bowl peel and grate the lauki and add salt and black - pepper then squeeze well.
- Now add the besan and spices and mix well and prepare - kofta. While forming shape you can add 1 raisin or 1 - tamarind pulp(This is completely optional,you can omit it - But i like it so)
- Now coat the koftas with corn flour and deep fry. Drain on - the absorbent paper and keep aside.
- Important to Note: - After grating squeeze the bottle gourd to make the shape - and crisp koftas.
- While frying the flame plays an important role - Flame must - be low to medium flame. otherwise the koftas will break in - oil.
- Curry: - Heat oil in a pan and add cumin,green cardamom and bay - leaf. Add turmeric and chilli powder.
- Now add prepared onion tomato paste and saute well.
- Add ginger garlic paste and cook til raw smell goes away.
- Add coriander powder,cumin powder,red chilli and salt.
- Add the squeezed water from lauki and 1 tablespoon of - curd at room temperature..
- Mix well and boil. Add garam masala and serve well with - chapatis.
