- Sprinkle in the mixed herbs, paprika, black pepper and stir. Chop potatoes and add to the mix then give it another good stir.
- Let it simmer for a further 5-10 minutes, checking the softness of the veggies every so often. Add the gammon meat after 10 minutes and return the lid to the pot and let it simmer for 5 more minutes.
- Place spinach at the bottom of the bowl and spoon a serving of stew on top. Lightly toast some chunky bread to serve and enjoy :)
