  2. In a pan add, 2 Tbsp olive oil, chopped garlic, 1/2 cup sliced onions.Stir continuously to avoid burning.
  3. Then add chopped veggies of your choice- potatoes, bell peppers, peas, carrots, cauliflower florets, diced tomatoes. Mix it for 4-5minutes.
  4. Add chickpeas. Mix it properly.
  5. Add powdered spices- oregano, black pepper powder, red chilli powder, cumin powder, Kashmiri red chilli powder, smoked paprika, dried thyme, salt as per taste. Mix all the ingredients together.
  6. Now add 3-4 cups water. Allow it to come to a good boil.
  7. Add saffron strands. Cover & simmer for 20 minutes in medium flame.
