Steps to make Vegetable soup and eba:
- Slice the vegetables after washing - - - Par-boil the cowtail and dry fish, add salt and seasoning until less stock
- Roughly blend the pepper and onion and add to the parboiled meat and fish and allow to boil for a minute. - - - Add the sliced vegetables and crayfish then let boil for one minute
- Add Palm oil and taste for seasoning and leave to boil for 3 minutes. Done!
This my first attempt at eba. It came out a but lumpy. I think I will try turning off the heat before adding the gari. Eba and Efo riro (Vegetable Soup) with Fish.
