Instructions to make Couscous and vegetable soup:
- For the couscous, I have got the easiest recipe for you:). Measure up the couscous you want to use. Add couscous to a bowl and pour into the bowl some tablespoons of oil. Also, sprinkle some salt and mix
- Now pour hot boiling water into the bowl as the same quantity of couscous used. Cover up for about 5 to 10 minutes.
- For the soup: fry onions in palm oil. Add the grounded tomato, peppers and garlic. Stir until fried.
- Add just a little bit of water or stock.
- Add in your cooked fish or cooked meat
- Add the spices (such as curry, black peppers, turmeric and cumin) and seasonings and simmer for about 3 minutes
- Add in the chopped spinach and yakuwa if available. Lastly add the crayfish and simmer for more minutes
- Serve this with couscous or really anything😂. Voila!
Meat-free vegetable broth for serving over couscous, also good on its own. Eggs can be added according to the number of people being served. I will make this often both with couscous and without.
