This Nigerian vegetable soup is easy to make, delicious and nutritious. A classic African dish which can be served as an accompaniment to dishes such as Egusi Soup. This my first attempt at eba. It came out a but lumpy.
Instructions to make Vegetable soup and eba:
- Wash the ugu and cut it, then keep aside
- Boil the meat and dry fish with onions, salt and maggi until cooked then add palm oil to it and more onions
- Let the meat stock dry then add the vegetable and stir the pot
- Add your crayfish and taste for seasoning then let it boil for 4 minutes
This my first attempt at eba. It came out a but lumpy. I think I will try turning off the heat before adding the gari. Eba and Efo riro (Vegetable Soup) with Fish. To eat, a small amount of ẹ̀bà is taken with the fingers and rolled into a small ball and dipped into the ọbẹ̀ (a thick soup) such as okra soup, bitter leaf (ewúro) soup or pepper soup (ọbẹ̀ ata or ẹ̀fọ́ depending on dialect) with either okro, ọgbọnọ (Igbo)/apọn.
