- Wash and Clean Gizzards Thoroughly, place inside pot and season to taste
- Wash liver, season to taste and cook in another pot
- Wash and peel plantain, cut in cubes and fry till golden brown
- Chop up cooked liver and Gizzard, set aside. Slice onions, tomatoes and bell peppers separately and set aside
- Add 4 tablespoons of cooking oil in a pan, Stir-fry the onion for 2 minutes. Add dice tomatoes and Minced Habanero pepper(Shombo). Fry for 3-5minutes
