  2. Saute onion in drippings. Drain and set aside. Reserve drippings
  3. Add onion, carrots, celery, potatoes to soup pot. Cover with water and boil until vegetables are tender.
  4. In skillet with drippings, add flour to make roux.
  5. Add milk and stir. Bring to a boil, stirring constantly.
  6. Add to vegetables, salt and pepper. Bring to a boil, lower heat and simmer.
  7. Soup is finished when a pat of butter melts. Serve immediately, topped with bacon, cheese, and chives.
