- Prep the vegetables as stated above: lightly season and set aside. Marinate the chicken fillets(add a drizzle of oil) and set aside; room temperature.
- Heat up a Tbsp of oil in a sauce pan on a medium high heat. Add the marinated chicken fillets and sear for 10-12 minutes on medium heat. Add the vegetables, stir and simmer for 5 minutes. Combine the stock mix ingredients and stir in into the sauce pan. Cover and simmer on medium low heat for 15 minutes
