  2. Simmer for 10 minutes untill chicken is cooked
  3. Remove chicken from broth and slice thinly and put to one side
  4. In the large sauce pan add the red curry paste to the stock from chicken and coconut milk.
  5. Add the veg and cook for a couple of minutes
  6. Add noodles and stir in chicken, bring to the boil
  7. Add coriander and 2 tbs of fresh lime juice and a dash of soya sauce
  8. Serve
