- Wash and slit eggplant and fry them till they change it's color
- Dry roast ground nut, sesame seed and coconut…. Grind it and make fine paste…. Keep aside this masala
- Heat oil in pan add bay leave, cumin, mustard seed, curry leaves and green chillies..
- Now add ginger garlic paste and saute well then add onion, tomato paste,all dry powder and add masala we prepared and lastly add tamarind pulp… Cover and cook for 15-20 minutes
- Add eggplant and coriander leaves cook for 5-10 minutes and it's done…. Serve with biryani Or butter naan
