  2. Make ready 1 Onions

Steps to make Baigan ki bhaaji:
  1. Cut the eggplant into big pieces. Wash it and keep it aside.
  2. Cut the onions and tomatoes and slit green chillies.
  3. Take a kadai. Add mustard oil.Let it heat. Add the onions and Curry leaves and saute till the onions change colour. Then add tomato pieces and green chillies. Saute for a while. Then add eggplant pieces. Keep the gas in medium flame. No need to add water. Saute the pieces. Let it fry. Then add turmeric powder and salt. Mix it well.
  4. Cover the kadai. After a while uncover it and check whether the brinjal pieces have been cooked.
  5. As the pieces turn soft and tender switch off the gas.
  6. The bhaji is ready to be served. This bhaji can be eaten with both rice or chapati.
