  1. in a large soup or stcl pot, over medium heat melt butter
  2. add onion and cook until soft.
  3. add wine and continue to cook until almost all liquid evaporates.
  4. reduce heat to low and whisk in flour ( do not let it brown) until it os combined.
  5. add water and pickle juice, whisking or stirrring into the flour mixture.
  6. bring just to a slow boil, stirring constantly, until soup slightly thickens.
  7. add dill weed.
  8. stir in cream, season with salt n white pepper.
  9. remove from heat.
  10. serve in bowl and garnish with Julienne dill pickles
