  4. Chop the tomatoes, habanero and 2 red bell pepper.
  5. Blend the chopped tomatoes, habanero and red bell pepper till smooth.
  6. Dice the gizzard and the plantains
  7. Heat a pan/ wok with vegetable
  8. Fry gizzard in oil
  9. Fry plantains in the same pan as well and take out when ready.
  10. It is important to use same oil for extra flavor
  11. Pour in diced onions
  12. Pour in blended sauce and allow to fry
  13. Season with thyme, curry and chicken stock and allow to simmer
  14. Pour in both gizzard and plantain and stir
  15. Pour in both of the sliced bell pepper
  16. Allow to saute for about 2 mins and take off heat.
