Vegetable Stock: Some pulav recipes are cooked in vegetable stock instead of water. Pulao made in a vegetable stock has a different taste and color. Spices and Herbs: You can always alter the amount. Now making this Vegetable Pulav has become a breeze in my Instant Pot.

Instructions to make Mixed vegetable pulav:
  1. Soak basmati rice in water for 30 minutes.
  2. In a pan take oil. Add cumin seeds + crushed cardamom seeds and cloves + curry leaf + bay leaf. Sauté well. Now add onion + garlic paste and sauté. Add cashews and raisins as well
  3. In a mixer take coconut + poppy seeds + cinnamon stick + coriander leaves + ginger and grind well. Add less water.
  4. Now mix the paste in the pan and sauté for 4 minutes. Now add all the vegetables.
  5. Now add water. So water to rice proportion should be 1.5 : 1. Add salt + jaggery + lemon + sauce.
  6. Add rice as well. Cover it and boil for 20 minutes or until water is evaporated and rice is cooked well.
  7. Serve the pulav with salad

Spices and Herbs: You can always alter the amount. Now making this Vegetable Pulav has become a breeze in my Instant Pot. In Fried Rice, rice and vegetables are cooked separate and finally mixed together along with sauces.
