The ingredients needed to make Mushroom Quinoa:
- Get 1 cup quinoa
- Take 1 tsp chicken stock granules
- Prepare 1 tbsp olive oil or cooking spray
- Take 5 clove minced garlic
- Get 12 oz cremini mushrooms, sliced
- Make ready 1 tbsp dry sherry
- Make ready 1/2 tsp thyme
- Take salt & pepper
- Make ready 1 (can garnish with minced parsley, if desired)
- Prepare 1 (can top with parmesan, when serving, if desired)
Steps to make Mushroom Quinoa:
- Cook quinoa in 2 cups of water with chicken stock granules, following package directions.
- Heat olive oil or cooking spray in skillet or wok over medium high heat. Add minced garlic and cook a few minutes.
- Add mushrooms and stir to coat in oil. Add dry sherry and cover pan immediately, for 2 minutes.
- Add thyme, salt & pepper, to taste, and cook about 2 more minutes, stirring seasongs in.
- Add cooked quinoa to mushrooms and stir until well combined.
- Can top with parmesan or add protein of choice to make it a meal! I usually add cooked shrimp and garnish with parsley. Can also add any cooked veggies you might like. Enjoy!
