Add the chickpeas, tomatoes and vegetable or chicken broth. West African-style curry with chicken and sweet potato.

  1. In a small frying pan toast the dedicated coconut
  2. And then pineapple, set to one side for later
  3. Using a large pan, heat it on a medium high heat, add the oil then the onion and garlic, stir until translucent.
  4. Meanwhile prepare the chicken, then throw that in.
  5. Make a space in the pan throw in the spices then warm them through!
  6. Stir well, add in the whole chilli then the chopped tomatoes.
  7. Throw in the chickpeas, peppers, desiccated d coconut and pineapple. If it’s dry add a splash of water! Stir and let simmer until the peppers are soft. (I like mine slightly crunchy for texture)
  8. Next add some yogurt depending on how hot you like the curry ! Stir well! Adjust the seasoning and serve !
  9. I topped mine with extra yogurt, toasted desiccated coconut and pineapple! Served with basmati rice and homemade coconut flatbreads! Enjoy
