  1. Soak the ingredients (Bengal gram Dal - 2 tablespoon, Toor Dal - 2 tablespoon, Black chick pea - 2 tablespoon, Green gram - 2 tablespoon, Horse gram - 2 tablespoon and 2 red chillies) for 3-4 hours.
  2. After 3-4 hours, grind the soaked ingredients along with 1/2 inch ginger, 3 large size garlic, 1 teaspoon pepper corn, 3 red chillies, curry leaves, salt and water as required.
  3. Once the batter is ready, ferment it for two hours, else you can add one ladder of idly batter to the Adai batter.
  4. After fermentation, add the chopped onions, cilantro, mustard seeds, urad dal, chanadal after the basic tempering with oil.
  5. Heat a dosa pan in medium flame and grease it with oil, pour the batter on the pan and add two teaspoon oil and cover it with a lid, maintain in medium flame.
  6. When one side is cooked, flip the dosa on the other side, add 1/2 teaspoon oil, allow it to cook till it turns golden brown.
  7. Maintain the stove in low flame throught out, so that the Adai gets cooked well inside and outside it will be crisp.
  8. Serve Pancharatna Adai Dosai with jaggery or coconut chutney or sambar or aviyal.
