Put the onion, garlic and potatoes into a roasting pan, scatter over the spices, season with salt and pepper and drizzle over the oil. Roasted sweet potatoes topped with chickpeas, toasted pine nuts, parsley and a lemon-olive oil dressing.

  1. Cut the onions tomatoes and potatoes keep aside. In a cooker add oil and lightly fry the cubed potatoes
  2. Remove the potatoes and add ginger garlic paste and fry till raw smell goes. Fry the onions and tomatoes, add curry leaves and cook well
  3. Add the masalas and cook well. Now drain the chickpeas and add it to the masala mix
  4. Add the potatoes, methi leaves, and add little water and salt abd cook in simmer.
  5. Atlast add tge coriander leaves and butter and close the lid and off the gas. Tasty potato chickpea roast is ready..
