- Bring the oil to a medium-high heat in a stockpot or large saucepan. Gently fry the onion for 2 minutes, only stirring to avoid sticking.
- Add the leek, chilli and garlic and fry for a further 4 minutes, stirring occasionally.
- Add the carrots, stir and then add the tomatoes and sugar, stirring gently but thoroughly.
- Add the potato and 1/4 l of its water. The add the stock and herbs and French beans, stir well and bring to the boil. Cover and simmer for 20 minutes, stirring occasionally.
- Add the diced gammon, stir well, replace the lid and continue cooking for a final 5 minutes.
- Season to taste but note that salt may not be needed given if using homemade stock. Add the garnish if wished.
- Serve piping hot with your choice of bread.
