- First of all wash spinach (palak), then put big pot on high flame add spinach and water and give 1 boil to blanch the spinach.
- Now strain the spinach and give bath of cold water to it and keep aside.
- Now lets do some preparation before cooking, cut the paneer into cube shape or whatever shape you like. Then chop onion thin and small.
- We will now make puree of spinach, in blender add ginger and green chilies (use generous amount of ginger) blend it one time then add in blanched spinach and make fine puree.
- Keep aside the puree and let start to cook..
- Now keep wok or pan on medium flame add in butter, when melts put the cumin seeds let crackle then add diced onion and sauté till light pink.
- After that add spinach puree to the wok and mix it nicely, add salt, if needed add water for your needed consistency, cover it and cook for 10 minutes.
- Now add paneer to the puree, garam masala, small cube of butter and adjust salt, mix well cook for another 5 - 8 minutes.
- Dhaba style palak paneer is ready to serve, garnish it with julienned ginger and fresh cream. I have served it with zeera rice and onion rings. Enjoy this simple yet delicious recipe with very few ingredients.
