- add vegetable oil to a wok or frying pan and set over medium-high heat. when the oil is hot add the red pepper and onion. cook, stirring constantly until the pepper is slightly softened, about 3 minutes. add the shrimp mixture. continue stirring and cooking until the shrimp turn pink and are cooked through, about 3 minutes more.
- remove the wok or frying pan from the heat. add remaining tablespoon of soy sauce, the water, a pinch of pepper, and the curry powder. stir until blended.
