We were in no mood to have usual idli fry and I wanted to do something different and interesting. This is when I found this recipe for idli kebabs. Idli is a very popular South Indian breakfast which is also a favourite Mumbai street food.   20. Prepare 10-12 Kashmiri Lal Mirch

  23. Make ready 1 cup Fresh Coconut (Thinly Sliced)
  24. Get 3 tbsp Roasted Chana Dal
  25. Get 2 tbsp Tamarind Pulp

  29. Get 1/2 cup Green Coriander
  30. Get 1/4 cup Mint Leaves
  31. Prepare 4-5 green chilies
  32. Take 5-6 cloves garlic
  33. Make ready 1 -inch piece of ginger
  34. Make ready 1/2 cup Fresh Coconut (Thinly Sliced)
  35. Take 10-12 Curry Leaves
  36. Prepare 2 tbsp roasted chanadal
  37. Make ready 3 tbsp Tamarind Pulp
  38. Prepare to taste Salt
  39. Make ready As required Water
  40. Make ready For tempering the chutney–
  41. Get 2 tbsp oil
  42. Prepare 1/4 tsp Jeera /cumin seeds
  43. Prepare 1 tsp mustard seeds
  44. Get 1 tsp Chana Dal
  45. Take 1 tsp urad dal
  46. Prepare 10-12 Curry Leaves

Punugulu is an easy tea time snack made with leftover idli batter. Seasonings are added to the idli batter and fried until nicely golden and crispy. Among all the different evening tea time snacks my mom used to make, this punugulu is one of my favorites which she used to make in a jiffy. Idli has occupied a very important place in Southern part of Tamilnadu.

Instructions to make Idli Kebab | Easy Party Snacks:
  1. In a large pan roast suji for 5 minutes or till it turns aromatic. Allow it to cool completely, and transfer roasted rava to a mixing bowl.
  2. Add yoghurt, salt and combine well without forming any lumps. Allow to rest for 20 minutes or till rava absorbs water.
  3. Again add water as required to prepare idli batter consistency.
  4. Just before steaming the idlis, add in eno fruit salt and give a gentle mix.
  5. Pour the batter immediately onto a greased idli plate.
  6. Steam them on a medium flame for 15 minutes or till the idli is cooked completely.
  7. For the red and green chutney, blend all ingredients for the chutney in a blender using water as required. Set aside.
  8. For the chutney tempering, heat oil in a small pan. Add Jeera, mustard seeds. When they begin to crackle, add chana dal and urad dal and roast till they turn golden. Finally, add curry leaves and mix well. Turn the heat off and pour over both chutneys.
  9. Mash the idlis and set aside.
  10. To make the kebabs, heat oil in a pan. Add onion and saute for few minutes.
  11. Add the frozen green peas and grated carrots. Mix well.
  12. Add turmeric, chili powder, garam masala, chat masala, and salt into it. Add little water and Roast for about a minute by covering with a lid.
  13. Add the mashed idlis, chopped cilantro, and mix well. Let it cool.
  14. Make kebab like patties with the mashed idli.
  15. Roast the kebabs on a pan/griddle using oil.
  16. Transfer small amounts of chutney into shot gasses. Drizzle the tempering over the chutney.
  17. Poke a toothpick/skewer into the kebabs and let the idlis rest across the shot glasses.

Among all the different evening tea time snacks my mom used to make, this punugulu is one of my favorites which she used to make in a jiffy. Idli has occupied a very important place in Southern part of Tamilnadu. The softness of idli lies in the selection of rice and black gram (Ulunthu/Urad dhal).
