Instructions to make Chettinad Egg Curry:
  1. Dry roast coriander, cumin, fennel, mustard, black pepper corn, fenugreek and coconut.
  2. Cool it and grind in mixer to a fine powder.
  3. Peel off boiled eggs and fry in 1 tbsp oil.
  4. Grind tomato and garlic paste together to a fine paste.
  5. Heat 2 tbsp oil in a wok and put cinnamon and cloves.
  6. Add chopped onions and sauté.
  7. When onions turned pink, add tomato garlic paste.
  8. Add turmeric and chilli powder.
  9. Now add grounded whole spices powder and salt and mix well.
  10. Cook for 5 minutes or until oil starts separate, then add coconut milk.
  11. Add boiled eggs and water, cover and cook for 5 minutes.
  12. Chettinad egg curry is ready.
