This recipe was given my daughter by her mother-in-law, Merilyn. It is a low cost soup.but hardy and very nutrious as well as really tasty.

Instructions to make Autumn Soup πŸπŸ‚:
  1. Finely chop onion, garlic and ginger. Fry for 5 minutes.
  2. Chop squash, peppers and sweet potato into 1cm chunks.
  3. Add all the veg to the pan. Add lentils as well. Mix thoroughly.
  4. Add stock, chopped tomatoes and curry powder. Cook for at least 30 minutes until veg is tender (longer the better, I cooked for 45 minutes).
  5. Serve with some nice toast and any steamed green veg you fancy.

This recipe was given my daughter by her mother-in-law, Merilyn. It is a low cost soup.but hardy and very nutrious as well as really tasty. Note from Chef, since several reviewers thought it was too much barley I have changed the recipe and have reduced by half the amount originally posted.
