  16. Make ready 1 spoon baking soda
  17. Get As per taste Chillies powder
  18. Get 1/2 tsp garam masala powder
  19. Make ready as per taste Salt
  20. Get as required Oil for fry
  21. Get For Stuffing in bajji-
  22. Make ready 100 gms tamarind
  23. Make ready 50 grams roasted chenna dhal
  24. Prepare as per taste Salt
  25. Prepare as per taste Chilli powder

Before preparing uggani, first we have to prepare a powder. To prepare this, first take a clean mixie jar, add roasted channa dal, red chilli powder, garlic, and salt. Mirchi bajji also known as mirapayakay bajji are a popular street food made by batter frying green chilies until crisp. These are also called as mirapakaya bajji in telugu, milagai bajji in tamil & chilli bajji in general.

Instructions to make Uggani with mirpakaya bajji:
  1. First, take a pan, put oil. Once oil gets heated, put mustard seeds, urad dhal, gram dhal curry leaves and chillies and fry it for 5 seconds. After that add onions fry till light golden brown..then tomatoes, turmeric, Salt. And fry it until your tomatoes are cooked. The. Add capsicum and fry it. Meanwhile, side by side just soak the rice puffs in water for 3 mins and drain it.
  2. Once it is fried, turn off the stove, and mix the fried ingredients into the drained rice puff and mix it. Garnish with coworkers and lemon on the top. Now uggani is ready.
  3. Next stuffing preparation for bajii. Take a nice jar, add above measured amount of tamarind, gram dhal, chilli powder, salt, garam masala. And little water to grind it into a paste. The other method is just ground tamarind and gram shall separately and mix it. Either method u can use. Take the green chillies slit the green chillies in the middle vertically, remove the seeds and stuff with this mixture and keep aside.
  4. Bajji preparation– Take a bowl, add gram flour/bajjibonda mix, chilli powder, baking soda, salt, water and mix it. - into a bajji consistency.. Now take a pan, heat the oil, once the oil s heated, take each shrugged green chilli dip it in the mixture, put in the oil. And deep fry it so finally bajji is ready.
