- Prepare 1.5 tsp Turmeric Powder
- Make ready 1.5 tsp Red Chilli Powder
- Take 2 Onions: (Big- Finely Chopped)
- Take 1 Tomato: (Big- Finely Chopped)
- Take 1 tbsp Garlic: Finely Chopped/Paste
- Take 2 tbsp Ginger Paste
- Get 1 tsp Green Chilli Paste
- Make ready 1.5 Cups Water (Hot): For the Cooking & Gravy
- Take Tempering Spices:
- Make ready 2 Whole Dry Red Chillies (Split into 2 halves)
- Make ready 1-2 Bay Leaves
- Prepare 1 tsp Cumins or PanchPhoron: (I’ve used the latter)
- Get 1 tsp Ghee: Optional- (I’ve not used)
- Take 1.5-2 tbsps Roasted Cumins & Red Chilli Powder
- Get 1 tsp Roasted Methi Powder
- Get 1 tsp Coriander Powder
- Make ready 1 Cup Mustard Oil: (For Cooking & Frying the Fish pieces)
- Prepare 1 tsp Garam Masala Powder (Homemade): Optional
I am a recent NPR convert and like all newbie converts I am right now totally hooked on, though only during my morning commute when my li'l one is not there in her car seat voicing her opinions which are far more important than those aired on NPR. Chunna Machha Jhola: A fish curry, similar to Machha Jhola, but prepared with small smelt fish. ^ "Machha Besara (A spicy dish of Rohu fish)". Fish Kalia is a Bengali delectable fish curry where fried fish (shallow-fry or deep-fry) cooked in rich and medium spicy gravy. Without these ingredients fish kalia can not be outstanding.
Instructions to make Odiya Machha (Fish) Kalia (Curry):
- Wash & Clean the fish pieces & coat it with some salt & turmeric powder generously & set aside for about 20-30 mins time before frying
- Heat a frying pan/kadhai/wok, over the high flame: Add in the measured mustard oil to it & wait until it starts releasing smoke- Then, drop in the fish pieces in batches- keeping sufficient spaces in between each one for proper frying
- Take it out on a separate plate- once done…Now, in the same oil: Add in the tempering spices & sauté until it start spluttering, releasing nice aroma
- Then, add in the chopped onions & sauté until translucent- add in some salt to it & keep sautéing until light golden brown…goes in the garlic, ginger & green chilli pastes to it- Continue sautéing until raw smell goes off
- At this point: Add in the chopped tomatoes & sauté again for about 2-3 mins time until it becomes a bit mushy…add in the turmeric, coriander & red chilli powders to it while, stirring continuously
- Add in some splashes of water while stirring continuously- ensuring the gravy mixture doesn’t get burnt but nicely & evenly sautéd & releases an alluring aroma- Mix all, well together
- Once done: Add in the measured hot water now, for the gravy consistency & also, to cook the fried fish pieces in the same- Bring it to boil & at this point: Drop in the fish pieces to it, mix everything together-gently
- Cover the pan with the lid & allow it to cook for another 8-10 mins time- Reduce the flame to low-medium… Keep stirring occasionally, in between
- Open the lid: Adjust the salt, sugar & spices at this point…Add in the ghee- if using, roasted (bhuna) masala & garam masala- Give it a really good mix, very gently
- Turn off the flame- Let it sit on the oven for about 10-15 mins time before serving it hot with piping hot steamed rice, fried rice 🍛 or similar…
