  3. Get 1 cup Black Eyed Beans or Lobia

  5. Take 2 tbsp Oil
  6. Get 1 tsp Salt or to taste
  7. Get 1 tsp Red Chilli powder or flakes
  8. Get 1 tsp Mustard Seeds
  9. Make ready 2 Sprigs Curry Leaves
  10. Take 1 tbsp Chana Masala
  11. Make ready 1 tbsp Chat Masala
  12. Prepare 1 tsp Dry Mango powder or Amchur
  13. Get 1 small bunch Coriander Leaves finely chopped

Add beef to bring all together. Transfer to a serving bowl and garnish with green onions as desired and serve. Whenever I stir-fry with noodles, I end up with a lump of noodles surrounded by the other ingredients, instead of a well-mixed stir-fry. I figure there must be a technique or prep step that I am missing.

Instructions to make Mixed Lentils Stir Fry:
  1. Wash and soak Chana, Lobia and the Moong overnight or at least 6-7 hours.
  2. Once they both have soaked well, we are ready to stir fry them. In a pan on a medium-high heat, add in a tablespoon or two of Oil. Wait for a minute before adding in the Mustard Seeds. Let them crackle a bit before adding others.
  3. Add in the Curry Leaves next followed by the sprouted Moong and Chana, followed by Salt, a teaspoon of Red Chilli flakes and Chana Masala. Stir well. Let it cook till the sprouts look crispy, but not to the point where they become too hard. You need not boil them and use directly. But if they are not soaked well, then you can boil them a little.
  4. Add in Chat Masala, Amchur and chopped Coriander. Mix everything well and your healthy snack is ready.

Whenever I stir-fry with noodles, I end up with a lump of noodles surrounded by the other ingredients, instead of a well-mixed stir-fry.
