Steps to make Spicy corn chowder:
  1. Cut the corn off the cobs,set aside.
  2. In a saucepan bring the broth, water and the cobs to a boil. Lower heat, simmer 30 min
  3. Melt butter, add onions, celery. Saute 4 min. Add peppers and spices. 4 minutes.
  4. Sprinkle flour over mixture. Stir for 2 min.
  5. Remove cobs from broth. Pour broth into stockpot. Stir until no lumps.
  6. Add remaining ingredients including the corn, and 1 handful of cilantro.
  7. Adjust seasonings, add salt if needed. Bring to a low boil,lower heat. Simmer for 30 minutes.
  8. Garnish with squeeze of lime, cilantro, sour cream, tortilla strips or crushed tostitos.
  9. Note to control heat, start with half the amount of spices. Adjust in step 7
