  1. Make ready 25 grams dried porcini mushrooms
  2. Make ready 500 ml vegetable stock

  4. Make ready 2 shallots, diced finely
  5. Take 3 garlic cloves, crushed
  6. Prepare 1 tbsp double concentrate tomato puree
  7. Get 1 carrot, use a peeler to peel into ribbons

  9. Take 1 grams fresh coriander, finely chopped
Steps to make Mushroom Soup:
  1. Soak the porcini in 250ml of boiling water for 25mins. Then separate the stock and mushrooms. Keep the stock and chop the porcini.
  2. Melt the butter in a pan on a medium to low heat.
  3. Add the shallots, garlic and carrots to the pan and cook gently for 2-3mins.
  4. Add the coriander and all the mushrooms, cooking for another 2-3mins.
  5. Use a little bit of the vegetable stock to deglaze the pan. Then add in the porcini stock, tomato puree and vegetable stock. Season then bring up heat until the liquid begins to bubble.
  6. Cook for about 30-35mins on a low heat.
