  1. Prepare 2 medium size butternut pumpkin - cleaned, peeled and cubed
  2. Prepare 1 Red onion - chopped
  3. Prepare 2 medium size carrots also cubed

  6. Make ready 1 tbsp cooking oil

  1. In a pot combine carrots and pumpkin. Let them dry out for better results you can roast them in the oven. This will talk about 25 minutes.
  2. If using the oven take them out and put them in your cooking pot. If using a pot already just continue and add your onions. Allow them to cook abit until they turn translucent.
  3. Add in garlic, salt and 1 tbsp if cooking oil. Add in water until it is slightly above your pumpkins.
  4. Let this boil until everything is well cooked.
  5. Once cooked put this in a blender and blend till its smooth
  6. Return to the pot again and allow to simmer a little like 5 minutes.
  7. Serve and garnish with coriander. You can also add lemon juice for that tangy taste.
