The ingredients needed to make Litti Chokha:
- Prepare For Litti -
- Get 250 gms Wheat flour
- Prepare 1 tsp Carom seeds
- Take 1/2 tsp Salt in flour
- Get 100 gms Sattu flour (can made at home by grinding Phutana dal)
- Get 1 tsp ginger garlic green chilli paste
- Take 1 tsp Mustard oil (raw)
- Make ready 1/2 tsp Onion seeds

- Take 1/2 tsp Salt in sattu Filling
- Take 1 tbsp coriander leaves finely chopped
- Take 1 tbsp water for adding in sattu Filling
- Prepare as required water for Kneading dough
- Take 1 tbsp oil as moyin
- Get As required Ghee for deep frying littis
- Take For Chokha:
- Take 2 Big aubergine (Bharta Baingan)
- Make ready 2 Potatoes (medium size)
- Prepare 8-10 Garlic cloves
- Prepare 1 inch Grated Ginger
- Prepare 3-4 green chillies
- Prepare 2 Onions chopped
- Get 2 Tomatoes chopped
- Take 1 tbsp Mustard oil
- Get As per taste Salt
- Take Handful chopped coriander leaves
- Get For Dal -
- Make ready 1 cup Toor dal
- Make ready 1 onion finely chopped
- Get 1 Tomato finely chopped
- Get 2-3 Garlic cloves finely chopped
- Get 1/2 inch Grated Ginger
- Prepare 2-3 Green chillies slit into halves
- Get 4-5 - curry leaves
- Get Handful Coriander leaves finely chopped
- Prepare 1/2 tsp Turmeric powder
- Take 1/2 tsp Cumin Seeds
- Prepare as required Ghee for tadka
- Make ready 2-3 Dried red chili for tadka
- Take for Green Chutney-
- Prepare 1/2 bunch Pudina leaves
- Make ready 1/2 bunch Coriander leaves
- Make ready 2-4 Green chillies
- Take 2-3 garlic cloves
- Take 1/2 inch ginger
- Make ready As per taste salt
- Get 1 tsp Cumin Powder
- Prepare As required water
- Prepare For Serving -
- Take As required chopped onions
- Prepare As required Green chillies
Litti is basically consists of wheat and sattu. Litti, along with chokha, is a complete meal originated from the Indian state of Bihar. It is also popular in Jharkhand and parts of Eastern Uttar Pradesh. It is a dough ball made up of whole wheat flour and stuffed with gram flour.
Steps to make Litti Chokha:
- Sattu Filling for litti-
- Take 100 gms of sattu flour in a bowl, add ginger garlic green chillies paste, chopped coriander leaves, salt, onion seeds, Mustard oil and water. Mix well sattu filling for litti is ready (one can also use any Mustard oil based achari masala) if it's available easily. Keep this filling aside.
- For Litti covering-
- Take wheat flour in a bowl, add salt, carom seeds and oil moyin. Now start adding water and knead a dough same as required for Chapati Dough (not too loose not too tight). Rest this dough by applying oil for 15 mins. After 15 mins knead again. Litti covering is ready.
- Litti frying -
- Take a lemon size portion from dough now with help of finger press it and make a Katori.
- Now, take 2 tsp of sattu filling and fill it in that katori. Seal the dough and give it a round shape with the help of your palm. Seal it properly so while frying our littis will not open in ghee.
- Prepare all littis in similar fashion and keep it ready for frying.
- Now heat ghee in a kadahi. Start adding littis in batches. Please note that throughout the frying process the gas flame will be low. Flip the littis once they are golden brown from once side. Similarly fry all littis and take out on tissue paper. Littis are ready.
- For Chokha-
- Pressure cook aubergine and potatoes by peeling them. Take one whistle. Discard the water and start mashing potatoes and aubergine together with the help of a Smasher.
- Heat Mustard oil in a kadhai. Add chopped onions, chopped garlic cloves, grated ginger and chopped green chillies. Saute well till raw aroma disappears. Now add chopped tomatoes and saute till tomatoes are soft and mushy.
- Add turmeric powder and salt. Now add smashed potatoes and aubergine. Mix well and adjust Salt. Cover and cook for 5 mins.
- Switch off the flame add raw garlic cloves roughly chopped from above, add raw Mustard oil around 1 tbsp. Add chopped coriander leaves. Chokha is ready to be served.
- For dal-
- Pressure cook toor dal for 3-4 whistles by adding salt and turmeric powder.
- Heat oil in a kadhai. Add cumin seeds let it splutter, now add curry leaves, dried red chillies, mix well, now add chopped garlic, grated ginger, chopped green chillies, add chopped onions and saute well. Once onions are pink add tomatoes. Cook till tomatoes are tender.
- Add cooked toor dal and give it a good mix. Let it boil on low flame for 10 mins and add coriander leaves. Add ghee from above. Dal is ready.
- Green Chutney -
- In a mixer jar add - washed pudina leaves, washed coriander leaves, green chillies, garlic cloves, ginger, salt, cumin powder and water. Blend to make a smooth Puree. Green Chutney is ready
- Serving Litti Chokha-
- In a plate arrange - crushed littis + add some ghee from above, chokha, tempored dal, green chutney, chopped onions and green chillies.
