Katsu curry is just a variation of Japanese curry with a chicken cutlet on top. I have used a store-bought block of Japanese curry roux which is commonly used in Japanese households. Finally a dish we can all make and eat without hours of prep! This dish is an all time.

The ingredients needed to make Chicken Katsu Curry:
  1. Take 4 Chicken Katsu (Fried Chicken Cutlet)
  2. Make ready 4 servings Freshly Cooked Rice
  3. Make ready <Fruity Curry Sauce>
  4. Prepare 1 Onion
  5. Get 1 Carrot
  6. Take 1 clove Garlic
  7. Get 1 small piece Ginger
  8. Get 2 tablespoons Oil
  9. Take 1 & 1/2 tablespoons Curry Powder
  10. Get 3 tablespoons Plain Flour
  11. Take 550 ml Chicken Stock
  12. Get 1-2 tablespoons Mango Chutney
  13. Prepare Salt & Pepper
  14. Take *Note: You can replace Curry Powder and Flour with 90 to 100g Japanese Curry Roux blocks. If you use Curry Roux blocks, use Water instead of Chicken Stock

Katsu Curry (カツカレー) is a combination of Japanese Curry and a panko-breaded cutlet. Not a big fan of pork or chicken? You can also enjoy Katsu Curry with shrimp or fish (See below). Curry over rice served with panko breaded chicken and a light salad.

Steps to make Chicken Katsu Curry:
  1. Finely chop up Onion, Carrot, Garlic and Ginger.
  2. Heat Oil in a large saucepan and cook vegetables. When vegetables are softened and slightly caramelised, add Curry Powder and Flour, and stir-fry for a few minutes.
  3. Add Chicken Stock and Mango Chutney, and bring to the boil. Reduce heat to simmer, stirring regularly, until the mixture thickens. Season with Salt & Pepper to suit your taste.
  4. *Alternatively you can use Japanese Curry Roux blocks instead of Curry Powder and Flour. If you use Curry Roux blocks, use Water instead of Chicken Stock, OR Unsalted Chicken Stock.
  5. Cut Chicken Katsu (Chicken Cutlet) into bite size. Place Freshly Cooked Rice on a plate, then Chicken Katsu and Curry Sauce.

You can also enjoy Katsu Curry with shrimp or fish (See below). Curry over rice served with panko breaded chicken and a light salad. One thing that makes chicken katsu curry different to other curries is the breaded and deep fried chicken. Another must when making chicken katsu curry is to ensure the sauce is super smooth. This is my version of the delicious Japanese katsu curry that they serve at Wagamama.
